Resep Red-pork Fried Rice

It's not difficult to make red pork, but if you haven't the time or inclination to make it yourself, you can probably find it at your local chinese market. If you do decide to try your hand at making it, you'll find it's both fun and rewarding.

Buy a kilo of pork.When it's cooked though you'll only have some 700 grams left, but you won't have to use it all. You can keep what you don't use for  a variety of other dishes (It can be kept for up to five days), such as red pork fried rice, red pork with egg noodles, Cantonese red pork and rice, or even red pork salad.



Ingredients
- 5 dishes steamed rice
- 1 kg pork loin.
- 3 chicken eggs
   One pich of red pork
- 2 tbsps honey
- 2 tbsps oyster sauce
- 3 tbsps vegetable oil
- 4 tbsps brown sugar
- 100 grams garlic
- 3 spring onions
- 3 coriander roots
- 5 cucumbers
- 2 tbsps minced soy bean paste
  Ground pepper for seasoning
- 1 tbsp light soy sauce

Preparation (1):
1. Cut the pork loin into five equal pieces. Rinse and leave to drain.
2. Finely grind the coriander roots and garlic and mix this with minced soy bean paste. Add this mixture to the pork placed in the bowl then add some brown sugar, edible red coloring and one cup of water. Mix all together and leave it to marinate for at least 30 minutes.
3. Heat the pan with 80% heat. When the water boils, add the pork to the pan. Use a little water to rinse the bowl and pour this into the pan.
4. Leave the pan to swimmer with medium heat for 20 minutes or until the water evaporates. When the water boils,frequently check and turn the pork over to prevent it form sticking the pan.
5. Place the pork on the dish. Coat it with honey when it's still hot.

Preparation (2):
1. When the pork cools, cut one piece in similar fashion to the way we cut yellow tofu for Phat Thai (Thai-style fried noodles).
2. Rinse, drain dan chop the spring onions.
3. Heat the vegetable oil in the pan.Place all three eggs in the middle of the pan.Break the eff yolks and stir fry until they are cooked. Add five helpings of steamed rice.
4. Season with oyster sauce, light soy sauce, and red pork and stir well. Add the prepared spring onions and stir again. Turn off the heat and place the rice in 5-6 dishes. Season with a little pepper. Serve when they're still hot.
5. Thickly slice the cucumbers and place them aside on a separate plate. Cut each lime into three pieces.(If you like your dish spicy, you can prepare fish sauce, chilli and lime juice relish. Cut the lime into three pieces, and squeeze out the pith into the relish to give it added flavour).
